I'm kind of new to the flashing/rooting/modding scene so I need some help :D

I have an Acer A500 running Android 4.0.3 (Kernel 2.6.39.4+, Image Acer_AV041_A500_RV05RC01_EMEA_DE, Build Acer_AV041_A500_1.033.00_EMEA_DE).
It's feels sort of sluggish all the time and sometimes Apps completely crash... So I was wondering if I should run a custom ROM or downgrade to HoneyComb or whatever :D

So what I am asking is:
what ROM is currently the most stable/fast? (official and unofficial ROMs)
can I use a different kernel and, if so, should I and which one?
how would I go about flashing a new ROM? (official or unofficial)

I tried searching this forum (and XDA-developers) and didn't really find answers to my questions or a guide on how to do this. The only thing I really found is that the OmniROM 4.4.4 has more features that 5.1.1 or CM12.1, so I'm guessing its the most stable one...

Any help is appreciated ;)
